New freezer

We got our new stand-alone freezer today. It’s all terribly thrilling. I had a good time last night moving stuff out of the regular freezer and rearranging things. I found a bunch of lasagne I had forgotten about, plus a lot of last summer’s garden tomato sauce. Luckily, they’re well-packaged so I think they’re still usable. The lasagne is already wrapped up in single servings, which will be handy to take to work for lunch or to eat on weekends.

What should I do with the tomato sauce? It’s pretty neutrally-flavored right now (just garlic, onion, salt, pepper, and a little sugar), so it could go in a lot of different directions with different seasonings. Anybody have any tomato sauce favorites?

    I was on the road Friday or would’ve commented on this then for sure!

    I’m SUPER excited about getting my hands on fresh, real tomatoes from my little garden. It sounds to me like you already have perfect sauce sitting there. I bet it would be great over chicken parmesan right now with no modifications. If I had that sauce I’d probably end up browning some Italian sausage and throwing together some kind of bolognese-type thing for over whole wheat penne. Boring? Maybe. But a bowl of that, some lightly-seasoned crostini, a bowl of fresh market greens, some chilled melon wedges, and a big glass of chianti has got to be about one of the most perfect meals around.
